Eating well as a college student is hard work. Food is expensive and school is exhausting; sometimes, it just seems easier to heat up some water for Ramen than to pull together a full meal. But, let’s face it, Ramen is kind of gross. Yes, it’s delicious in a comfort food sort of way, but it’s completely devoid of nutrients and full of fat and salt – not the best brain food. For the past year or so, it’s been my goal to find meal options that are delicious and affordable, and healthy at least most of the time. I love food, so it’s worth it to me to find the time to prep and cook a meal. If it’s worth it to you, too, you’ve found the right place.
